The Baddie Melt

This breakfast patty melt that starts with a seared sausage patty and is topped with a fried egg, a combo of melty white and yellow American cheese, caramelised onion and fennel, and a sweet and spicy shishito pepper jam, sandwiched between griddled sourdough pullman bread.

It's melty, savory, rich, and the shishito jam helps balance it all out.  

It's a baddie for real.


 

Ingredients:

Shishito Pepper Jam:

  • 1 lb shishito peppers 

  • 1/4 cup sherry vinegar (or any white vinegar)

  • 2 tbsp minced pickled jalapenos

  • 1 tbsp pickled jalapeno brine

  • 1 cup white sugar

  • 1 1/2 tsp kosher salt


Baddie Melt

  • 4 oz breakfast sausage

  • 1 egg

  • 2 slices of yellow American Ccheese

  • 2 slices of white American Ccheese

  • 1 onion (thinly sliced)

  • 1 fennel bulb (thinly sliced)

  • 2 slices sourdough bread

  • 2 tbsp butter

  • Kosher salt and black pepper to taste


1. Shishito Pepper Jam

Destem and roughly chop shishito peppers in a food processor or by hand with a knife. In a medium saucepan, add all ingredients and stir together.  Bring mixture to a boil,then reduce to a simmer until thickened and no liquid remains, about 30 minutes.  Blend with an immersion blender and place in a mason jar or airtight container, letting cool to room temperature.

2. Sandwich ingredient prep

Melt butter in a small saucepan, add your onion, fennel, and a pinch of salt.  Cook, stirring occasionally until deeply caramelized, about 40-45 minutes.   Form sausage into a square shape, slightly larger than your bread.  Sear in a skillet until deeply browned.  Set aside and in the same pan, fry your egg. 

3. Sandwich Build

Lightly butter your skillet over medium heat and place your slices of bread down, topping each half with the yellow and white American cheeses.  Cover with a lid to melt the cheeses,then top one half with the caramelized onion and fennel, sausage patty, and fried egg.  Top the other half with shishito jam.   Close the two halves together and cook until the bread is golden brown.  Let cool on a wire rack. Slice and enjoy!
