The Marge
A special Mother's Day sandwich inspired by Marge Simpson's famous pork chops and her short-lived pretzel franchise, "The Marge" is a panko fried pork chop sandwich topped with creamy applesauce mustard, and pickled cabbage slaw on a toasted pretzel bun. Recipe Details:

Ingredients:
2 boneless pork chops
1 1/2 cups AP flour
1 1/2 cups panko breadcrumbs
2 eggs
1 package of store bought coleslaw mix
1 tbsp whole grain mustard
1 tbsp dijon mustard
1 tbsp mayo
3 tbsp applesauce
1 cup apple cider vinegar
1 tsp kosher salt
1 tsp sugar
2 pretzel buns
1 tsp each dried rosemary, thyme, marjoram, chervil, turmeric, and black pepper
1/2 tsp or a whisper of MSG
1 cup of frying oil of choice
Pickled Cabbage Slaw:
Place slaw in a bowl.
Sprinkle salt and sugar over and squeeze to fully coat.
Top with apple cider vinegar.
Mix and refrigerate for at least an hour, preferably overnight.
Creamy Apple Sauce Mustard:
Mix mustards, mayo, and apple sauce together.
Season with salt and pepper to taste.
Fried Pork Chops:
Pound pork chops to about 1/2 inch thick.
Season both sides with salt and refrigerate for an hour or overnight.
Pat dry, set up a breading station: 1st bowl with AP flour and half the spice blend, 2nd bowl with whisked eggs, 3rd bowl with panko and the rest of the spices.
Dip chops in AP flour, then egg, and finally panko.
Heat oil to 350°F and shallow fry until golden on each side, about 2-3 mins per side.
Drain on a wire rack and sprinkle with salt and any leftover spice blend.
Build Sandwich:
Toast pretzel buns in butter.
Spread creamy apple sauce mustard on the bottom bun.
Top with a fried pork chop and pickled cabbage slaw.
Crown with the top bun.
