Recipe Details:

Difficulty: Easy

Ingredients:

1/4 cup ramp pesto or sub any pesto

1/4 cup mayo

1 Chicken breast pounded 

1 Cup all purpose flour

1 Egg

1 Cup Italian breadcrumbs

4 oz thinly sliced mortadella (4-5 slices)

1/4 neutral frying oil

1/3 cup of arugula

1 small lemon

1/4 cup cherry pepper relish

3-4 slices of fresh mozzarella 

1 seeded hoagie or sub roll


  1. Toppings Preparation:

    • Mix mayo and pesto together and set aside.

    • Toss arugula in lemon juice. Season with salt and pepper and set aside.

  2. Chicken Cutlet:

    • Season flour with salt and pepper.

    • Coat chicken in flour, then egg, then breadcrumbs.

    • Shallow fry for 3 minutes per side until golden and cooked through.

    • Set aside to cool to room temperature.

  3. Build Sandwich:

    • Split the roll, leaving a hinge.

    • Layer in this order: ramp pesto mayo, chicken cutlet, mortadella, fresh mozzarella, lemon-dressed arugula, cherry pepper relish.

    • Wrap in parchment and cut down the middle.
