An east coast spin on the classic BLT swaps out bacon for salty and crispy pork roll or Taylor Ham (argue about it in the comments) with some heirloom tomatoes, and tarragon mayo, on toasted milk bread! Read the recipe below, or..
Recipe Details:

Ingredients:
5 slices of Pork Roll (or Taylor Ham)
2 heirloom tomatoes
2 slices of white bread
1/2 cup mayo
2 tbsp fresh tarragon
1 tsp lemon juice
Butter lettuce
salt and pepper
Mise en Place:
Combine mayo, tarragon, and lemon juice in an immersion blender.
Slice tomatoes and season with salt and pepper.
Wash and dry butter lettuce.
Toast bread in butter until golden.
Pork Roll Preparation:
Slice pork roll into 1/2 inch slices.
Cut four small slits into each side of the pork to prevent curling when frying.
Fry for 3 minutes on each side until crispy.
Set on a paper towel to drain excess grease.
Build Sandwich:
Spread tarragon mayo liberally on each slice of toast.
Layer tomatoes, followed by pork roll, and then lettuce.
Top with a second slice of bread and cut diagonally.
